Ingrients & Directions


25 g Chopped mixed peel; (1oz)
125 ml Infusion of fine quality
-tea; (Assam or Ceylon)
; (4fl oz)
200 g Mixed dried fruit; (7oz)
100 g Clear honey; (3 1/2oz)
1 Egg
225 g Self raising flour; (8oz)
1 ts Mixed spice
25 g Butter; (1oz)
1 Pinches salt

Pre-heat the oven to 180?C/350?F/gas mark 4

Put the fruit, chopped peel, tea infusion and honey into a bowl and
leave to soak overnight. Grease and line a 900g (2lb) loaf tin.

Add the beaten egg, sifted flour, salt and melted butter and mix well
so that all the ingredients are well distributed. Place in the
greased tin and bake for 45 minutes.

Remove from the oven and allow to cool in the tin.
