1 c All-purpose flour
1 c Whole wheat flour
1 ts Baking soda
1 ts Baking powder
1 ts Salt
3 tb Honey
3 tb Sugar
1 Egg
3 tb Butter; melted
1 c Milk plus whatever more you
-need to achieve correct
-texture
2 Bananas (older bananas seem
-to taste better)

I mix all the dry ingredients, then add the egg, honey, butter, and milk.
Finally, I blend in the bananas. I use a cordless beater, which is not
capable of going too fast. Makes about 20 4″ pancakes, I guess. I usually
make “silver dollars” for my kids, so I don’t count ’em.

I’ve also substituted apples (2), and a tsp of cinnamon for bananas, with
good results.
