Ingrients & Directions


1 c Unsifted all-purpose flour 1 1/2 c Light brown sugar
1/4 ts Baking powder 1/3 c Granulated sugar
1/2 ts Salt 4 Extra-large eggs
1/4 ts Ground cinnamon 1 ts Vanilla extract
1/4 ts Freshly grated nutmeg 1 1/2 c Chopped walnuts
10 tb Unsalted butter, melted and 1 c Sweetened flaked coconut
-cooled (1 stick + 2 tb)

Preheat the oven to 350 degrees. Butter and flour a 13x9x2-inch
baking pan.

Sift together the flour, baking powder, salt, cinnamon and nutmeg.

Whisk the butter, light brown sugar, granulated sugar and eggs in a
bowl. Blend in the vanilla extract. Add the flour mixture and mix
until the particles of flour are absorbed. Stir in the walnuts and
coconut.

Pour and scrape the batter into the prepared pan. Bake for 25
minutes or until just set.

Place the pan on a cooling rack. Cool completely. Cut into thirty 2
1/4 by 1 3/4-inch rectangles. Remove the bars from the pan using a
metal spatula. Store in an airtight container.
