2 cn (29-oz ea) sweet potatoes or
-yams; drained
1 cn (12-oz) evaporated milk
2 tb Butter; softened
2 Eggs
3/4 c Firmly packed light brown
-sugar
1/2 c Buttermilk baking mix
2 ts Vanilla extract
3/4 ts Ground cinnamon
1/2 ts Ground nutmeg

Preheat oven to 350 degrees. Coat a 9-inch, deep-dish pie plate with
nonstick cooking spray.

Combine sweet potatoes and evaporated milk in a blender and blend until
smooth. Pour into a large bowl and set aside.

Add remaining ingredients to the blender and blend until well-combined,
scraping down sides as needed. Add to sweet potato mixture; mix well. Pour
into pie plate, mounding in the center, and bake for 50 to 60 minutes, or
until a wooden toothpick inserted in the center comes out clean. Allow to
cool completely on a wire rack before serving.

A Mr. Food note: It doesn’t take much to make this look festive – just top
each slice with a dollop of whipped topping and an additional sprinkle of
cinnamon.
