Mix:
5 c All-purpose flour
1 1/4 c Instant dry milk — nonfat
1/3 c Sugar
2 tb Baking powder
1/2 ts Ground cinnamon
1 tb Salt
For pancakes, to 1 1/2 cups
Mix, add:
1 Egg
1 c Water
3 tb Vegetable oil

Combine all mix ingredients in a large bowl; mix well. Place in a large
airtight container and store in a cool dry place. Use within 6-8 months.

Yield: 7 cups mix

To make a few batches of Homemade Cinnamon Pancakes:

Place the pancake mix in a medium-sized bowl. In a small bowl, combine the
egg, water, and oil. Add to the pancake mix and blend well, blending in
more water if thinner pancakes are desired. Let stand for 5 minutes. Cook
pancakes on a hot griddle or in a large skiller (that has been coated with
non stick vegetable spray) for 3-4 minutes, or until browned on both sides.

Yield: 10-12 4-inch pancakes
