1/2 c Packed brown sugar
1/4 c Sugar (I used turbinado)
1/3 c Sunsweet Lighter Bake
1 1/2 ts Ener-G Egg Replacer beaten
-with:
2 tb Water
1 ts Vanilla
3/4 c Flour (I used whole wheat)
1/2 ts Each baking soda and
-cinnamon
1/4 ts Each baking powder and salt
1 1/2 c Quick cooking oats (not
-instant)
3/4 c Raisins

This recipe is slightly altered from the recipe on the jar of Sunsweet
Lighter Bake ™, a fruit substitute for fat. I also made the recipe with
applebutter – equally good. Particularly good frozen – very crunchy and
delish. Lighter Bake Oatmeal Raisin Cookies (slightly altered for FF)

Preheat oven to 375 degrees. Spray baking sheets lightly with Pam (or use
baking parchment paper to avoid any need to prepare pans). Set aside. In
mixing bowl, beat together sugars, Lighter Bake, replacer mixture and
vanilla. In another bowl, combine flour, baking soda, cinnamon, baking
powder and salt. Stir into Lighter Bake mixture. Stir in oats and raisins.
Drop by rounded spoonfuls onto prepared baking sheets. Bake 8-9 minutes or
until edges begin to brown (mine took around 12 minutes). Cool on racks.
Makes 2 dozen cookies.

Per cookie: Calories: 85 (5% cff), Protein: 1.5g, Fat: .5g, Carbo: 18g.
