Ingrients & Directions


1 9″ pie shell 1/4 c Fresh lime juice
1/3 c Cornstarch 1 tb Lime peel; grated
1 1/2 c Sugar Few drops green food colorin
1/4 ts Salt Meringue (using 3
1 1/2 c Water — egg whites) or
2 Egg yolks; beaten — cool whip

You’ll need a recipe for merinque using 3 egg whites, or you can just
put cool whip on it after it cools off.

Combine cornstarch, sugar, and salt in saucepan; gradually add water,
stirring until smooth. Bring to a boil over medium heat, stirring,
and boil 1 minute. Remove from heat and quickly add 1/2 of the hot
mixture to the egg yolks, mixing well. Return to the hot mixture,
blending thoroughly.

Bring the mixture to a boil, stirring, over medium heat. Boil 1 minute
longer. Remove from heat; stir in lime juice and peel and food
coloring to make filling a delicate green. Pour into cooled pie shell
at once.

Completely cover with meringue. Bake at 350 for 12 to 15 minutes.
Cool at least 1 hour before cutting.
