Ingrients & Directions


2 Eggs
2 c Sugar
1 1/2 c Oil
1 ts Vanilla extract
3 c Sifted all-purpose flour
1/4 ts Salt
1 ts Baking soda
1 ts Baking powder
1 ts Cinnamon
1 ts Nutmeg
2 1/2 c Finely chopped apples

-GLAZE-
1/2 c Apple juice
1 1/2 c Powdered sugar
1 Lemon; grated rind & juice

1. Grease and flour a tube pan.

2. In a large mixing bowl, beat together the eggs, sugar, oil and vanilla.
Sift together the flour, salt, soda, baking powder, cinnamon and nutmeg.
Add to sugar and egg mixture and beat until well blended. Stir in apples.

3. Bake about 1-1/2 hours at 300 degrees.

4. Prepare the glaze and pour over the cake while it is warm. GLAZE:

1. In a saucepan, heat apple juice and add sugar, lemon juice and rind;
beat until smooth.

NOTE: The recipe bears the name Linda Mark, West Fork, AR.
