3/4 c Brinser’s Best Yellow Corn
-Meal
3/4 c Flour
1/2 c Sugar
1 1/2 ts Baking powder
3/4 c Milk
1/4 c Butter; melted
1 Egg

From: Brinser’s Best Yellow Corn Meal

Mix all together(do not overmix, just until blended) and bake in 8″ square
pan of in muffing tins at 350 degrees ro 25-30 minutes. The Dry ingredinets
may be mixed and kept in an air-tight container until needed. The just add
the liquid and bake

I also like the idea of baking it in a heavy frying pan with a little hot
oil in the bottom, it gives it a nice crust on the bottom. Heat the pan
with the oil in it in the oven until it is not, then pour in the batter and
bake as directed.

Serves 16, well maybe on a good day but 8 is probably closer
