Chocolate Irish Potato Cake

1 c Butter — softened
1 1/2 c Sugar
4 oz Unsweet chocolate — melted
1 c Mashed potatoes
1 tb Instant coffee
4 Eggs
1 3/4 c Flour
2 ts Baking powder
1/2 ts Salt
1 c Irish Cream liquor
Powdered sugar

Preheat oven to 350~F. In a large bowl, beat together butter and granulated
sugar with an electric mixor on medium speed until light & fluffy 1-2
minutes. Beat in melted chocolate, mashed potatoes, and coffee powder until
well blended. Add eggs, one at a time, beating well after each addition.
Sift together flour, baking powder, and salt. Beat into chocolate mixture
alternately with Irish Cream liquor just until combined. Turn batter into
well greased 12 cup bundt pan. Bake 45-50 minutes until a cake tester
inserted in center comes out clean. Let cake cool 15 minutes, then unmold
onto a wire rack and let cool completely. Sift powdered sugar over top of
cake before serving.
