8 sl Bread; toasted crisp and
; golden
50 g Butter
25 g Soft brown sugar
250 g Luxury mixed fruit
50 g Pecans; halved (optional)
600 ml Single cream
150 ml Milk
2 1/2 ml Vanilla essence
3 Eggs; beaten
2 1/2 ml Ground cinnamon

Grease a deep ovenproof dish oval or square approximately 30cm x 20
cm.

Thickly butter the toasted bread and cut into triangles. Place half
into the prepared dish. Sprinkle with half the sugar, fruit and nuts.
Top with the remaining toasted bread, sugar, fruit and nuts.

Place the cream, milk, vanilla essence and eggs in a large bowl and
beat together. Pour over the bread and fruit mixture, sprinkle with
cinnamon and bake in a preheated oven 190C/380F/gas 5 for 45 minutes
until set.

Optional serving suggestion: Grate 50g of flavoured or white marzipan
over the top of the baked pudding. Place under the grill for
approximately 3 minutes until golden and serve.
