2 1/2 c All-Purpose Flour — sifted 1 Egg — beaten
1 tb Baking Powder 1 c Bananas — mashed ripe
1/2 ts Salt 1 tb Lemon Rind — grated
1/4 c Butter — softened 1/2 c Milk
1 c Sugar 1 c Walnuts — chopped

Preheat oven to 350 F. Sift dry ingredients together. Cream butter,
gradually adding sugar, then the egg. Beat until smooth. Add bananas,
lemon rind, and milk. Add flour mixture. Stir until blended. Then add
nuts. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake for 1 hour.
Cool for 10 mins in the loaf pan, then remove and cool completely on
a wire rack. This bread is even better the 2nd day. Yield: 1 loaf.
