2 ts Baking powder
2 ts Baking soda
3/4 ts Salt
1 tb Ground cinnamon
1 ts Ground allspice
1 ts Fresh-grated nutmeg
1/2 c Drained canned crushed
-pineapple in unsweetened
-juice
1/4 c Raisins
1/2 c Pecan or walnut pieces
1 c Sugar
3 lg Eggs
1 c Packed dark brown sugar
1 1/4 c Bland vegetable oil
1/2 c Applesauce
2 ts Pure vanilla extract
2 c Finely shredded peeled
-carrots (about 4)
2/3 c Shredded sweetened coconut

FROSTING
8 oz Cream cheese (regular or
-“light” but not nonfat);
-softened
1/2 Stick unsalted butter;

1 c Confectioners’ sugar
1 sm Lemon; Grated zest and
