Ingrients & Directions

1 ts Sea salt
2 c All-purpose flour
1/4 c Fruity olive oil
1 Orange; zest of
1 Lemon; zest of
1/2 c Fresh orange juice; up to
-2/3

FILLING
1 1/2 c Fresh full fat farmer cheese
1 Orange; zest of
1 Lemon; zest of
2 tb Sugar
2 tb Milk; and
1 Egg yolk; beaten together

Mix the flour and salt in freestanding mixer with paddle and make a well in
the center. Pour in the olive oil and orange and lemon zest and blend on
low speed. Add the orange juice slowly, and beat until a soft and elastic
dough forms, about 2-3 minutes. Let it rest for about 1 hour. Preheat the
oven to 375 F.

Mix the cheese, sugar, and orange and lemon zest. Sprinkle your work
surface with flour, and roll the dough out with the rolling pin. Cut 5-inch
rounds and place 1 heaping tablespoon of filling in the center of each.
Using a spoon, spread the filling so that it covers about two-thirds of the
area, leaving about 2/3 inch of pastry around. Roll the edge of the pastry
inward to form a triangle shape. Transfer the pies to an oiled pan, brush
with the milk and egg mixture, and bake for 20-25 minutes, or until golden.
Let cool on a rack before serving.
