Sunny Apple & Apricot Lattice Pie

2 ea Pie shells 1/2 t Cinnamon
1 c Dried apricots, chopped 1/4 t Salt
3 ea Apples, peeled, cored and 1 t Graulated sugar
-sliced NutriWhip for garnish
1/3 c Granulated sugar -(sugarfree, fatfree
1 T All purpose flour -whipped topping mix)
1 t Grated orange rind

In sauepan, combine apricots with water to cover, simmer, covered, 10
minutes, until soft. Drain, reserving 2 tbsp of the liquid. Let
cool. In bowl, combine apricots, apples, 1/3 cup sugar, flour orange
rind, cinnamon, salt and reserved liquid. Place 1 pie shell in pie
plate and then set on cookie sheet. Spoon in apple mixture. Invert
other pie shell onto work surface, and flatten. Cut into 1/2 inch
strips. Dampen edges of filled pie shell. Arrange pastry strips
over top to make a lattice pattern, sealing edges. Trim with knife.
Sprinkle with sugar. BAke in 425F oven for 15 minutes, then reduce
heat to 350F and bake 25 minutes, or until apples are tender. Serve
warm or cold with NutriWhip as a topping. Origin: NutriWhip and
