1/2 c Sugar; ( or to taste )
1 tb Cornstarch; ( or arrowroot )
1 Bag; (16 oz) frozen
-unsweetened peaches
1 ts Chopped candied ginger
2 Whole wheat or flour
-tortillas;, ( look for
-fat-free) cut into 1/2 inch
-wide strips
1 tb Course sugar; ( sugar in the
-raw )
Cooking spray

This cobbler or deep dish type pie practically makes itself ! The ” crust “
is actually tortillas !

Preheat oven to 400 degrees and lightly spray an 8 or 9 inch round quiche
dish or cake pan.

In a mixing bowl, stir together sugar,and cornstarch. Ad peaches with juice
and ginger and stir to combine evenly.

Spread half the peach mixture into prepared dish. Arrange half the tortilla
trips over peaches. Top with remaining peach mixture.

Arrange remaining strips over peaches in a lattice pattern. Lightly spray
and sprinkle with coarse sugar and cinnamon if desired. Bake about 25
minutes until filling is hot and bubbly throughout and top is browned.
