Mary’s Cheddar-chive Biscuits

Ingrients & Directions


1 3/4 c Flour
1/2 ts Salt
1 tb Baking powder
2 tb Sugar
1 tb Chives, freeze-dried
1 oz Sharp cheddar cheese,
-shredded
2 tb Vegetable oil
3 tb Melted butter
2/3 c Milk

Sift dry ingredients together. Mix in chives and grated cheese. Combine oil
and melted butter and mix into the dry ingredients. Add milk. Mix just
until it all comes together. (I use a knife.) Turn out on a lightly floured
board and divide dough into 8 portions. Gently knead each of the eight
portions ONLY until you form a nice round biscuit. Place on an ungreased
cookie sheet. Bake in a preheated 400 degree oven for about 15 minutes.
Yields 8 biscuits. This recipe can be doubled easily. NOTE I always have to
fix these biscuits when we have leftover ham. My kids make ham sandwiches
with them and carry them to the beach for lunch. Also, leftover biscuits
(surely, I jest) can be used the next morning to make bacon, egg and cheese
biscuits, a la Mickey D’s! Me ke aloha, Mary
