2 Hen’s Eggs (I used Medium)
2 tb White Sugar
3 c Flour (She means
-All-Purpose)
1 c Sweet Milk (I recommend
-Whole, or even
-Half-and-Half)
1 ts Soda
2 ts Cream of Tartar
2 tb Melted Butter (She called
-for “A lump the size of a
-small hen’s egg”)

Cream the eggs, and sugar. Slowly add the remaining ingredients in the
order listed. She says bake them in a “Quickish” oven (That’s about 400
degrees) for 1/2 an hour, until they are springy. Use a square or round
baking tin, and serve them hot, with butter, topped with cinnamon-sugar.
