Ingrients & Directions


1 2/3 c All-purpose flour 3 tb Fresh lemon juice
3/4 c Sugar 3 tb Margarine, melted
1 tb Poppy seeds 1 ts Grated lemon rind
1 ts Baking soda 1 Egg, beaten
1/4 ts Salt Baking spray with flour
3/4 c Skim milk

Combine first 5 ingredients in a large bowl, and stir well; make a
well in center of mixture. Combine milk and next 4 ingredients in a
bowl; add to dry ingredients. Stir just until dry ingredients are
moistened.

Spoon batter into an 8″ square baking pan coated with baking spray.
Bake at 375 degrees for 28 minutes or until a wooden pick inserted in
center comes out clean. cool 10 minutes in pan on a wire rack. Yield
9 servings (about 200 caloriesper 2 1/2″ square.
