1/2 c Melted Butter
1/4 ts Vanilla Extract
3 Egg Whites
1 c Flour
3/4 c Sugar
1 ts Instant Tea Powder
1/8 ts Salt
2 tb Water

Makes 3-4 dozen fortunes.

Mix together egg whites, sugar and salt. Stir in vanilla, flour, tea water
and melted butter at one time. Chill batter at least 30 minutes. Preheat
oven to 350 F.

Drop a rounded teaspoon of chilled batter onto a greased cookie sheet.
Spread batter with the back of the spoon to make a thin 3″ diameter circle.
Spread another circle of batter on the pan in the same way. Put on only 2
per sheet. (Otherwise, they will cool and harden before you get a chance to
fold them.) Bake 3-5 minutes or until edges turn brown.

To fold: Wearing cotton gloves, place cookie on a clean counter, lay a
fortune across the center. Lift one edge of the cookie and fold it to form
a semi-circle. Holding cookie at edges, fold middle of folded edge over rim
of an egg carton. Place folded cookie in one of the egg carton holes to
harden.

Makes 3-4 dozen cookies.

Fortunes should be 1/2 x 3″ rectangles.
NOTE 1: This is fun to do with children but it is VERY important to use the
cotton gloves! Hot cookies can badly burn adult fingers. Children’s fingers
are even more sensitive.

NOTE 2: As a teen, when I demonstrated fortune cookie folding for 4H and
Senior Citizen’s groups, I baked the cookies in a toaster oven. Since you
are baking only 2 cookies at a time, the toaster oven baking sheet works
well. At home, however, it is much more convenient to use the oven.
