COMBINE
3/4 c BUTTERMILK
1 EGG
1 tb OIL

MIX WELL AND ADD
3/4 c WHOLE-WHEAT OR REGULAR FLOUR
1 PACKED TABLESPOON BROWN
-SUGAR
1 ts BAKING POWDER
1/2 ts BAKING SODA
1/2 ts SALT

FOLD IN
2 MASHED BANANAS (can do in
-food processor)

A good friend of mine who is currently diet conscious and trying to be into
low fat etc. gave me this fine concoction. It is really quite good, and
easy to prepare. Good for a quick snack, or dribble syrup on it for
breakfast. Try it, youll like it.

Drop 4 inch size pancakes (about half of a 1/4 cup measuring cup) into Pam
sprayed or tefal skillet and cook until puffed, and little bubbles appear
and pop open all over the top. Turn only once. You can gauge the doneness
when you turn the first one, it should be nice and golden brown. Lift and
peek under the bottom side a couple of minutes after you turn one over and
you will know better when to take them up. Can be frozen, and reheated in
microwave or mini-toaster oven, or in toaster. Excellent.
