Ingrients & Directions


-DRY INGREDIENTS-
2 c Flour 1/2 tb Baking powder
1/2 ts Salt 1 ts Cinnamon
1/4 ts Baking soda 1 ds Allspice

-WET INGREDIENTS-
4 Ripe bananas, mashed Zest of 1/2 lemon, or more
2 Jars baby food prunes 2 Egg substitutes, beaten
1/2 c Brown sugar, or less 1 1/2 ts Vanilla
Juice of one lemon

-OPTIONAL INGREDIENTS-
Raisins Dried cherries

Preheat oven to 350.

In large bowl, mix dry ingredients. Combine wet ingredients
thoroughly, and add to dry ingredients. Mix until evenly moistened
(do NOT overmix). Spread batter into a loaf pan that has been
prepared with oil spray.

Bake 45-50 mins til a knife inserted comes clean. Let cool in pan 10
mins, then cool completely on rack.
