Ingrients & Directions


1 1/2 c Chopped candied fruit 1/2 ts Allspice
1/2 c Raisins 1/2 ts Salt
1/4 c Rum or cold coffee 2 Eggs
1 1/4 c All-purpose flour 1/2 c Unsweetened applesauce
3/4 c Splenda granular sweetner 1/4 c Vegetable oil
2 ts Baking powder 1/2 c Coaarsely chopped nuts(e.g.
1 1/2 ts Cinnamon Pecans,walnuts,filberts
1/2 ts Nutmeg

Combine candied fruit,raisins and rum. Let stand 30 minutes or until
most of liquid is absorbed.Mix flour,splenda,baking
powder,cinnamon,nutmeg, allspice and salt;set aside.Whisk together
eggs,applesauce and oil until smooth.Stir in fruit mixture,flour
mixture and nuts until blended.Spread evenly in greased 8″ x 4″ loaf
pan.Bake at 350 degrees for 45 to 50 minutes or until tester inserted
in centre comes out clean.Cool in pan 10 minutes. Remove from pan and
cool on rack. Wrap well and refrigerate.

Tip: Substituting some of the fat with applesauce lowers the fat
content and provides moistness and flavour.
