Ingrients & Directions


-MIX TOGETHER-
2 c Whole wheat flour 1/2 ts Nutmeg
1 tb Baking powder 1/4 ts Cloves
ts Baking soda 1/2 ts Salt
1 tb Cinnamon 1 c Raisins

———————INTO THE BLENDER TIL SMOOTH———————
1 c Soy or rice milk 1/2 c Chopped pitted dates
1 c Applesauce 3 ts EnerG egg replacer
2 sm Overripe bananas 6 tb Water

AND
2 sm Apples, diced, no need -to peel

Prepare a 9×13 pan with veg spray. Preheat oven to 375.

Toss the apples into the flour mix, pour in the blended stuff, mix
gently until mixed. Pour into prepared pan, smooth out top, and
sprinkle nuts all over (if desired). Bake 30 mins, until sides pull
away from pan and it passes toothpick test.

Lee’s note: this is pretty sweet as is, but if you have a real sweet
toth, add some maple syrup in place of the 6T water, or use vanilla
flavored soy milk.
