German Pancake

Ingrients & Directions


3 Eggs
1/2 ts Salt
1/2 c Flour
1/2 c Milk
2 tb Butter

When my mom married, her sister from Dorchester gave her a copy of the
Settlement cookbook. It has about 3 pages of pancakes, of various
nationalities including Norwegian, Russian, French, Baked,Souffle,Bohemian,
blintz, knish, crepes, potato, matzoh, and yes, German! While this recipe
does not call for fruit, it sounds like it would be easy enough to add any
sort you wished, even peach.

Preheat oven to 450^F. Beat eggs until very light, add salt and flour, and
then the milk, beating all the time. Spread bottom and sides of a 10-inch
cold skillet thickly with butter. Pour in the egg batter, and bake 20
minutes; reduce the heat to 350^F and continue baking until crisp and
brown. Place on hot platter and serve with confectioners sugar and lemon
juice. Serves 4
